All public markets in the country need fresh pork every day. This is supplied by the local abattoirs.
In the city of Dumaguete, I was there early in the morning at 3 a.m. when the slaughtered pigs were delivered by truck. More than 100 slaughtered pigs were unloaded as a whole and for the most part distributed to the individual market stalls, where they are later cut up by the stall owners.
The part you can see here on the steel tables in front of the truck are the slaughtered pigs, which are cut up by butchers and then packed into ice boxes for collection.
Around 6 to 7 a.m., this daily haunting is over and nothing more can be seen.
