One of the women is seated at the counter, her focus drawn to a plate of steaming food before her. With a spoon in hand, she takes a bite, savoring the flavors of the cuisine offered. Before her, the glass display showcases an array of culinary delights, tempting passersby with their aromatic allure. Philippine eateries, known locally as “carinderias” or “turo-turo” (which translates to “point-point” in English), are vibrant hubs of gastronomic delight scattered across the archipelago. These eateries are renowned for their affordable yet delicious home-cooked dishes, often served buffet-style or in a “point and choose” manner, where customers select their desired dishes from a variety of options displayed behind glass counters. From traditional Filipino staples like adobo and sinigang to regional delicacies and street food favorites, carinderias offer a taste of the diverse flavors that define Filipino cuisine. Each coconut is priced at a modest 20 to 30 Pesos, a small investment for the treasure trove of flavors they hold within.     Standing tall and proud, the coconuts bear the marks of their tropical origin – rough, brown husks encasing the sweet nectar within. Soon, these husks will yield to the skillful hands of the buyer, revealing the succulent meat hidden within. Tradition dictates the method of extraction – a sharp bolo knife expertly wielded to cleave the coconut in two, exposing its tender flesh. Then, with precision and care, the hard coconut meat will be extracted using an electric grinder, transforming it into delicate shreds of grated coconut. But the journey doesn’t end there. The grated coconut, now ready for its next transformation, will be pressed to extract the creamy richness within – coconut milk, the elixir of countless delectable dishes. From savory curries to sweet desserts, the possibilities are endless, each dish infused with the essence of the tropical paradise from which the coconuts hail. In this bustling marketplace, the promise of culinary delight hangs heavy in the air, embodied by the humble coconut awaiting its fate. For those with a discerning palate and a love for the culinary arts, these coconuts are not just fruits – they are vessels of flavor, waiting to be unlocked and savored in dishes that will linger in memory long after the last drop of coconut milk is gone.

And so, in Gary and Jenny’s home, art and nature intertwined, each piece a testament to the beauty of creation and the passion that fueled it. If you want, when you visit Liptong Woodland, in Bacong, you can not only get a private tour of ‘Tatay Eti’ through its native tree and plant species, but also try out your driving skills on an original ‘ligiron’. However, you should only do this at your own risk. The ligiron is a traditional wooden scooter used in Bacong, Negros Oriental, a province in the Philippines. It’s crafted from wood and resembles a small sled with two axel wooden bars for the rider to siton. The rider goes downhill with the ligiron and his load, if there is any. It’s a popular recreational activity and a cultural tradition in the region, often enjoyed by children and adults alike. The ligiron is also sometimes used in friendly competitions or races, showcasing both skill and balance. Breaking is done with the help of your own feet.
