Good morning! In the Philippines, the appreciation for bread, pastries, and cakes goes beyond mere enjoyment – it’s a ritual deeply influenced by the colonial era of the Spanish. Engage any Filipino in a conversation, and tales of lunch boxes filled with turnovers and rolls, breakfasts featuring bread pockets straight from the local panaderia (bakery), or indulging in sweet, buttery pastries during afternoon merienda (tea) are sure to unfold. Baked delights hold a special place as pasalubong or souvenirs. Regardless of their global location, Filipinos always yearn for the comforting, nostalgic flavors of their childhood. Pandesal When it comes to quintessential Filipino bread, pandesal takes the crown (derived from the Spanish “salt bread”). This breakfast staple is often relished dunked in coffee or hot chocolate. Crafted from eggs, flour, yeast, salt, and sugar, the humble pandesal boasts a soft and fluffy interior with a delicately crunchy crust. Filipinos have a penchant for purchasing pandesal fresh from the oven, enjoying them warm either on their own or generously slathered with matamis na bao (coconut jam). The photo was taken some time ago in the early morning on the beach at Dauin. A rain shower over the sea. Today, Monday, it looks a little grayer over the sea in Dauin with more rain. The rain area of the low pressure system ‘Kabayan’ is expected and the provincial administration canceled school classes in the entire province.

We came early to see what was going on here in the early morning. Not much at first. Some dive resorts are sweeping up fallen leaves. The dive boats are quiet. Occasionally someone sits at the tables. We meet a Filipino family from Geneva in Switzerland, who actually come from Dipolog but are on a trip to Dauin. A young couple are bathing a little further on and are on their own. A young woman comes towards me on the beach. She’s in a hurry in her colorful beachwear and umbrella against the already biting sun.     I see movement on one and then the second dive boat and make my way back. Here the first dive boats are being loaded with the necessary equipment and the first divers have also arrived at the station and are getting ready for boarding. The ice cream man is ringing his ear and mine. I take pity on him and tell my wife to buy us two ice cream           It’s probably busy here in the afternoon and evening hours, in the shade of the trees and on a balmy tropical night on the beach, on cushions and in hammocks.
