To experience the delivery of the slaughtered pigs to the public market in Dumaguete City, you have to get up early and be there when the van arrives. We were there at 2:45 am and the van was already there and half unloaded. But that was fine. More than 100 slaughtered pigs had arrived and these were taken from the van to the individual stalls by helpers. Others were stored on iron tables in front of the market, where they were later cut up. Some of the stall owners and butchers were already on site and had started to cut up the slaughtered pigs.

What was striking at the market in Dumaguete City was how the pigs were transported by the workers. The butchers had created openings on the neck and hind legs where the workers could put their hands through. This allowed them to carry the heavy pigs in front of them.

Beef had also already been delivered to some of the stalls.

We took the opportunity to buy the pork we needed for home. We had to look hard to find an open vegetable stall at this early hour, but there was one.

Afterwards, we had coffee and hot chocolate at one of the snack stands that was already open.

Then we had a look at the fish landing and bought some warm bread at a bakery that was already open at this time.

Later, we went back to the meat traders at the market, who were all busy cutting up the pigs they had delivered.
